Watermelon and Feta Salad


We are experiencing lovely warm days here in Auckland.  Hot summer days calls for something cold and refreshing.  Iced water, ice cream, ice blocks and watermelon are some of the cooling tastes of summer.

Watermelon on it’s own is refreshing, especially when it’s cut straight from the fridge.   I found this salad via Jamie Oliver’s website and was game to try it.  I made it while we were on holiday at the beach last week.

I think next on the list is a watermelon cocktail…

WATERMELON AND FETA SALAD

Serves 4 – 6 as a side salad

500g watermelon flesh, cut into chunks

80 – 100 g feta, crumbled

few sprigs of mint, roughly chopped

1/4 medium red onion, finely sliced

extra virgin olive oil

lemon juice

freshly ground pepper

Method

Combine watermelon, feta , mint and red onion in a serving dish.  Drizzle olive oil over salad, and freshly ground pepper.  Slice a lemon in half, and then squeeze a little lemon juice over to add a bit of zing.

The salad is now ready to serve.
