ROCKET AND PEAR SALAD
Serves 6 – 8
50g walnuts (optional)
100g rocket (1 bag)
1 firm pear
50 – 100g parmesan or feta cheese
juice of half a lemon
2 – 3 tbsps of light olive oil
salt and pepper
Toast the walnuts in a frying pan on a low heat for 5 minutes.
Cut the pear into thin slices.
Combine rocket with pear and walnuts. Add either shaved parmesan cheese, or cubed feta cheese. Squeeze over the lemon juice, and add the olive oil. Season with salt and pepper. Toss lightly and then serve.
