Yummy Lamb Burgers

I found this recipe in one of Donna Hay’s books that  I borrowed from the library. As usual I have added my own little twist.

It is so easy for a quick Friday night meal, or even mid-week meal. The secret of good food, is to make it look good too. It would be so easy to just have the burgers in buns, with tomato sauce, but I recommend you try the extra additions as suggested in my recipe below.

I served my burgers with cucumber raita, chargrilled red peppers and rocket.

YUMMY LAMB BURGERS

Serves 4.

500 g lamb mince

2 cloves garlic, minced

salt and pepper

To serve:

Choose something creamy: cucumber raita/store bought mayonnaise, aioli

Choose something green: spinach, lettuce or rocket

Choose something red: chargrilled peppers, tomatoes or beetroot

Burger buns or baps

METHOD

Combine lamb mince, garlic and salt and pepper in a bowl. Divide mixture in to 4 patties. Press down on patties to ensure as flat as possible.

Barbecue or cook in slightly oiled hot fry pan for 2-3 minutes each side.

While burgers are resting, cut buns in half and grill on both side.

Fill buns with lamb burger and your favourite combination of white, green and red ingredients.  Anything goes really, relish, aioli.

For the chargrilled red pepper: Cut 1 red pepper in half.  Place in middle of oven heated to 220 deg C.

For the cucumber raita: Combine 1 cup of greek/natural yoghurt with 1/4 grated cucumber, 1 tbsp. finely chopped mint leaves. Mix well.  Crushed garlic can also be added.  Cucumber raita goes well with curries too.
