It’s the weekend again. We are having such lovely weather at the end of this best-ever summer. The leaves are starting to fall, autumn is starting to show it’s face.
While my husband is in the garden sorting out the leaves, I have been inside, not cooking, but using my new computer! This new whizz bang computer promises to make my food blogging so much easier.
Let’s hang on to summer recipes for a little bit longer. If you are looking for a something healthy and easy for lunch or dinner, this is the recipe for you. Serve with salad or on it’s own. It can be eaten warm or cold.
For a vegetarian option, eliminate the bacon.
COURGETTE SLICE
Prep time: 15 mins
Cooking time: 30 – 40 mins
Serves: 4 – 6
Ingredients:
3-4 medium courgettes (375g courgettes)
3 rashers of bacon
1 onion
5 eggs
1 cup of self-raising flour
1 cup grated cheese
1/2 cup vegetable oil
salt and pepper
Tomato to garnish
METHOD
Heat oven to 180 deg C.
Grate courgettes. Finely chop onion and bacon. Lightly beat the eggs in small bowl,
Combine courgettes, onion, bacon, flour, eggs, cheese and oil. Mix well and season with salt and pepper.
Pour into well greased baking dish, approx. 16x 26 cms. Garnish with siced tomatoes.
